Roast in many countries refers to the mode of cooking that includes a grill and fire, but in Uruguay, the term is most often used to refer to a cut of beef very popular in the country. Roast or roast strip is the rib of the cow cut crosswise.
Each roast strip is approximately five to ten centimeters wide, but it can vary and the customer usually asks at the butcher shop if he prefers thin or wide strips. The thickness of the bone of the ribs indicates the age of the cow, so that the meat is more tender it is better to buy roast with small and rounded bones. Uruguayans calculate half a kilo of roast strip per person, but they are good to eat and a little exaggerated, so you can buy a little less. El asado en muchos países hace referencia al modo de cocción que incluye una parrilla y fuego, pero en Uruguay, el término se utiliza con mayor frecuencia para referirse a un corte de carne vacuna muy popular en el país. El asado o asado de tira es el costillar de la vaca cortado de forma transversal.
Cada tira de asado mide aproximadamente entre cinco y diez centímetros de ancho, pero puede variar y el cliente suele pedir en la carnicería si prefiere tiras finas o anchas. El grosor del hueso de las costillas indica la edad de la vaca, para que la carne sea más tierna conviene comprar asado con huesos pequeños y redoneados. Los uruguayos calculan medio kilo de tira de asado por persona, pero son de buen comer y un poco exagerados, así que puedes comprar un poco menos. Se lo puede acompañar con alguna achura, las más típicas de Uruguay son el chinchulín, la tripa gorda, el choto, las mollejas y el riñón. Embutidos como chorizo y morcillas saladas y dulces también suelen estar presentes en la parrilla uruguaya.
Postre chajá, el Verdadero uruguayo. El chajá es un bizcocho humedecido con almíbar y relleno con dulce de leche, merengues, crema chantilly y duraznos en trozos, se decora con crema, merengues en trozos, cerezas y gajos de duraznos.
